Crock Pot Chicken Fajitas

I love crock pot meals. They are fast, easy but still better than canned soup and sandwiches. When I find new crock pot meals, it's very exciting. I recently came across this one on the Food Network website for crock pot fajitas. It looked simple so I wanted to give it a try. 

I went ahead and added a bit to the recipe because it seemed like it was going to be a tiny bit bland and dry. I added in some packaged taco seasoning as well as some lemon juice. I also added water because it didn't call for any, which I thought was strange.

Even Geddy boy liked it! Especially the avocado.

They were quite the success! We used those raw tortillas (which we cooked, of course) and added salsa, cheese, lettuce, avocado, and tomatoes. They were really tasty. I was quite pleased. Plus, they were super fast! I am excited to add this to our other crock pot recipes.

Also, can we talk about this salsa?! It is amazing. I find myself eating this stuff for lunch when I should be eating real food. Oops. They also have a green salsa (I don't remember what it's called) but it is DIVINE. Walmart carries it so...go get some.

I think that salsa is smuggled into the country illegally-- because it's an addictive substance!
